  • 2 medium sweet potatoes, peeled and diced
  • 1 lb BBQ chicken, cooked and shredded
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 onion, diced
  • 2 tablespoons olive oil
  • 1/4 cup BBQ sauce
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add in the diced sweet potatoes and onion, cooking until the sweet potatoes are tender, about 10-15 minutes.
  3. Stir in the shredded BBQ chicken and the BBQ sauce, mixing everything together well.
  4. Sprinkle cheese over the top and cover the skillet until the cheese is melted, about 2-3 minutes.
  5. Season with salt and pepper to taste and garnish with green onions if desired.

For quicker prep, buy pre-cooked BBQ chicken. Store leftovers in an airtight container for up to 3 days.
