Crispy and golden Baked Parmesan Zucchini that makes a perfect snack or side dish.

Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchini into thick rounds, about half an inch each.
  3. Mix in a bowl utilizing breadcrumbs, grated Parmesan cheese, garlic powder, Italian herbs, salt, and pepper.
  4. Oil each zucchini slice with olive oil, then coat with the breadcrumb mixture.
  5. Arrange the coated zucchini slices on a baking sheet, spaced apart.
  6. Bake for 20-25 minutes or until golden brown, flipping halfway through.
  7. Enjoy! Serve warm as a snack or side dish.
