Deliciously crispy baked eggplant fries that provide a guilt-free snack option without sacrificing taste.

Ingredients

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil spray or cooking oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the eggplant into fry-shaped sticks, aiming for about 1/2 inch thick.
  3. Prepare the egg mixture by beating the eggs with a pinch of salt and pepper.
  4. Mix the breadcrumbs and grated Parmesan cheese in another bowl.
  5. Coat each eggplant stick in the egg mixture, then the breadcrumb mixture.
  6. Arrange the coated eggplant fries on a parchment-lined baking sheet.
  7. Oil the fries by giving them a light spray with olive oil.
  8. Bake for 20-25 minutes, flipping halfway through.
  9. Serve warm with your favorite dipping sauce.
