  • 2 1/4 teaspoons instant yeast
  • 2 tablespoons olive oil
  • 1 3/4 cups warm water
  • 3 tablespoons olive oil (for topping)
  • 3 cloves garlic, finely minced
  • 1/2 teaspoon salt (for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh rosemary or thyme (optional)

Instructions

  1. Mix the flour, salt, and instant yeast in a large bowl. Slowly add the olive oil and warm water until a shaggy dough forms.
  2. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  3. First rise: Place the dough in an oiled bowl, cover, and let rise for 1-2 hours until doubled.
  4. Shape the dough into a 9×13-inch pan, letting it rise again for 30-45 minutes until puffy.
  5. Prepare the topping by mixing olive oil, garlic, salt, Parmesan, and herbs in a bowl.
  6. Dimple the dough, add the topping, and sprinkle with flaky sea salt.
  7. Bake at 425°F (220°C) for 20-25 minutes until golden brown.
  8. Finish by brushing with olive oil and letting it cool for 10 minutes before serving.

Notes

Store leftover focaccia in an airtight container for up to 2 days or refrigerate for a week. Freeze for up to 3 months.
