A creamy, dreamy pasta dish made with ripe avocados, garlic, lemon juice, and tossed with fresh cherry tomatoes and basil.

Ingredients

  • Pasta
  • Ripe avocados
  • Garlic
  • Lemon juice
  • Olive oil
  • Salt
  • Pepper
  • Cherry tomatoes
  • Basil

Instructions

  1. Boil the Pasta. Cook the pasta according to package instructions until al dente, stirring occasionally.
  2. Blend the Avocado Sauce. In a blender, add ripe avocados, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy.
  3. Drain the Pasta. Once cooked, carefully drain it in a colander, letting all the water escape.
  4. Combine the Sauce and Pasta. Pour the avocado sauce over the warm pasta and toss gently.
  5. Garnish and Serve. Spoon the pasta into bowls, adding halved cherry tomatoes and torn basil on top.

Notes

Serve with a light salad or crusty garlic bread. Store leftovers in an airtight container in the fridge for up to 2 days.
