Ingredients

  • 1 ripe avocado
  • 2 eggs
  • Salt
  • Pepper
  • Red pepper flakes (optional)
  • Lemon juice (optional)

Instructions

  1. Toast the bread slices until golden brown.
  2. Poach the eggs in a gently simmering pot of water for about 3-4 minutes.
  3. Prepare the avocado by mashing it in a bowl with salt, pepper, and lemon juice.
  4. Assemble the toast by spreading the mashed avocado evenly on the toasted bread.
  5. Add the poached eggs on top of each slice of avocado toast.
  6. Season with additional salt, pepper, and red pepper flakes, if desired.

Notes
