A vibrant and refreshing salad featuring fluffy couscous, buttery avocado, cherry tomatoes, and crunchy cucumbers, all drizzled with a zesty lime vinaigrette.

  • 4 cups couscous
  • 1 ripe avocado, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup cilantro, chopped
  • 1 teaspoon salt (more to taste)
  • 1 lime, juiced
  • ¼ cup avocado oil
  • 2 teaspoons carne asada seasoning (more to taste)

Instructions

  1. Cook the couscous according to package directions until al dente, then rinse under cold water.
  2. Prepare the cherry tomatoes and cucumbers by slicing the tomatoes in half and chopping the cucumbers into bite-sized pieces.
  3. Combine the cooled couscous, chopped avocado, halved cherry tomatoes, and chopped cucumbers in a large mixing bowl.
  4. Create the lime vinaigrette by whisking together lime juice, avocado oil, salt, and carne asada seasoning in a small bowl.
  5. Dress the salad with the lime vinaigrette, stirring gently to coat without crushing the avocado.
  6. Garnish with crumbled feta cheese and chopped cilantro before serving.
