Delicious Authentic Homemade Umm Ali Egyptian Bread Pudding

A beloved Egyptian dessert, Umm Ali is a warm bread pudding layered with flaky pastry, creamy milk, sweetened condensed milk, and nuts, delivering comfort with every spoonful.

  • 1 package puff pastry (400g, 15 square pieces)
  • 1.5 liter milk
  • 473 ml whipping cream
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1 can sweetened condensed milk (300ml)
  • 3/4 cup granulated sugar
  • 1 can table cream or ashta (170g)
  • 1 cup almonds (chopped)
  • 1 cup pistachios (chopped)
  • 1 cup raisins
  • 1/2 cup shredded coconut

Instructions

  1. Preheat your oven to 180°C (350°F). Roll out the puff pastry sheets, then place them on a baking tray. Bake for about 20 minutes until golden and crisp. Allow them to cool before breaking them into bite-sized pieces.
  2. In a large mixing bowl, combine the milk, whipping cream, sweetened condensed milk, and the table cream (or ashta). Whisk everything together until well-blended. Don’t forget to add the cinnamon and cardamom for that heavenly aroma!
  3. Stir in the granulated sugar until fully dissolved in the creamy mixture. Taste it — this is where the magic starts to happen!
  4. Fold in the chopped almonds, pistachios, raisins, and shredded coconut into the creamy blend. The colors and textures are so inviting already!
  5. In a baking dish, layer half of the puff pastry pieces at the bottom. Pour half of the creamy mixture over the pastry pieces, allowing it to soak in. Then, layer the remaining pastry on top and cover with the rest of the creamy mixture.
  6. Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and the pudding is bubbling. You’ll know it’s done when your kitchen is filled with delightful smells!
  7. Remove the Umm Ali from the oven and let it cool for at least 10-15 minutes. This will allow the layers to set perfectly.
  8. Dish out generous portions into bowls, and for an indulgent touch, add a sprinkle of extra nuts or a dollop of cream on top.

Notes

For a dairy-free version, substitute the milk and cream with almond milk and coconut cream. Experiment with different dried fruits or nuts to customize your dish.
