A vibrant and flavorful one-pot dish inspired by the heart of Louisiana, featuring shrimp and smoked sausage cooked with Cajun spices.

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions, chopped (for garnish)

Instructions

  1. Brown the sausage: In a large pot, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned.
  2. Sauté the vegetables: Add in the chopped onion, bell pepper, celery, and minced garlic. Sauté until tender, about 5 minutes.
  3. Add the rice: Stir in the long-grain rice and cook for 2 minutes to toast it slightly.
  4. Combine liquids and seasoning: Pour in the chicken broth and diced tomatoes, then add the Cajun seasoning, salt, and pepper. Stir well.
  5. Simmer to perfection: Bring to a boil, reduce heat to low, cover, and let simmer for about 20 minutes.
  6. Introduce the shrimp: Once the rice is tender, stir in the shrimp and cook for an additional 5 minutes.
  7. Rest before serving: Remove from heat and let stand for 5 minutes.
  8. Garnish and serve: Serve hot, garnished with chopped green onions.

Notes

This dish pairs well with a light green salad or crusty French bread. Adjust the Cajun seasoning to your heat preference.
