  • 70 milliliter Rice Vinegar
  • 30 milliliter Water
  • 1/2 teaspoon Sugar
  • 1 pinch Salt

  1. Prepare the Rice Noodles: Begin by cooking the thin rice noodles according to package instructions. Typically, this means soaking them in hot water for about 5 minutes until they soften. Drain and set aside.
  2. Chop the Vegetables: While the noodles are soaking, thinly slice the rainbow Swiss chard leaves, red cabbage, cucumber, bell pepper, and carrot. Don’t forget to finely chop the chili and ginger for that extra kick!
