Delightful Cornish game hens glazed with sweet apricot preserves, served with colorful roasted vegetables.

  • 2 whole Cornish game hens (about 1.5 lbs each), cleaned and patted dry
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup baby carrots
  • 1 cup Brussels sprouts, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the apricot preserves, soy sauce, Dijon mustard, and minced garlic to create the glaze.
  3. Season the Cornish game hens inside and out with salt, pepper, and thyme.
  4. Place the hens in a roasting pan and brush generously with the apricot glaze.
  5. Arrange the baby carrots and Brussels sprouts around the hens in the pan.
  6. Roast in the preheated oven for 50-60 minutes, basting with the glaze every 15 minutes, until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  7. Remove from the oven and let rest for 10 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven to retain crispy skin.
