  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk
  • 2 cups apples, peeled and chopped
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • Whipped cream (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine flour, baking powder, salt, and sugar in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined.
  5. Knead the dough gently on a floured surface and roll out to about 1/2 inch thick.
  6. Prepare the apple filling by mixing apples, cinnamon, nutmeg, brown sugar, and lemon juice in a bowl.
  7. Assemble the sandwiches by placing half the circles on a baking sheet, spooning the apple mixture on top, and covering with the remaining circles.
  8. Bake for 12-15 minutes or until golden.
  9. Serve warm, optionally topped with whipped cream.

Notes

For added flavor, consider using vanilla extract in the apple filling. Store leftovers in an airtight container for up to 2 days.
