  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ¼ cup fresh cilantro, chopped plus extra for topping
  • â…“ cup lime juice (about 2 limes worth), freshly squeezed
  • 4 chicken breasts (or thighs)
  • 2 tablespoons avocado oil (or coconut oil)
  • 1.5 cups coconut milk (full fat recommended)
  • ¼ cup chicken broth
  • Salt and pepper, to taste
  • Lime slices for garnish (optional)

Instructions

  1. Season the Chicken: Season your chicken breasts with salt and pepper on both sides, allowing the flavors to penetrate the meat.
  2. Sear the Chicken: Heat avocado oil in a large skillet over medium-high heat. Add the chicken breasts and sear until golden brown, about 4-5 minutes per side. Once seared, set aside on a plate.
  3. Cook the Shallots: In the same skillet, add the diced shallot and cook for 2 minutes until translucent, stirring occasionally to prevent burning.
  4. Sauté Garlic and Ginger: Add minced garlic and grated ginger to the skillet. Sauté for 1 minute until fragrant.
  5. Combine the Sauces: Pour in the coconut milk, chicken broth, and lime juice. Stir everything to combine.
  6. Simmer the Chicken: Return the chicken to the skillet, reduce the heat to medium-low, and simmer uncovered for 12-15 minutes until the chicken is cooked through.
  7. Finish with Cilantro: Stir in the chopped cilantro and simmer for 1 more minute.
  8. Serve Hot: Adjust salt and pepper to taste before serving, garnishing with additional cilantro and lime slices if desired.
