A quick and comforting chicken pot pie made with gnocchi, ready in just 30 minutes.

Ingredients

  • 1 package gnocchi
  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 cups chicken broth
  • 1 cup heavy cream or milk
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the cooked chicken and mixed vegetables, cooking until warmed through.
  3. Stir in the chicken broth and heavy cream (or milk), garlic powder, onion powder, salt, and pepper.
  4. Add the gnocchi and let it simmer until cooked, about 3-5 minutes.
  5. Remove from heat and let it sit for a few minutes to thicken.
  6. Garnish with fresh herbs before serving.

Notes

Use rotisserie chicken to save time and feel free to swap in your favorite vegetables.
