A simple yet elegant dish featuring succulent chicken breasts in a creamy garlic herb sauce, all prepared in one pan for effortless cleanup.

  • 4 chicken breasts (boneless, skinless, about 2 pounds), lightly pounded
  • To taste Creole Cajun seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 shallot (finely diced)
  • 10 cloves garlic (whole)
  • 1 cup chicken stock or broth
  • 1 tablespoon lemon juice (fresh-squeezed)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon Dijon mustard (smooth or whole grain)
  • 1 cup heavy whipping cream
  • 1 tablespoon fresh tarragon (roughly chopped, plus more for garnish)
  • 1 tablespoon fresh parsley (finely chopped)
  • 1/3 cup Parmesan cheese (fresh grated)

Instructions

  1. Season the chicken breasts generously with Creole Cajun seasoning.
  2. Sear the chicken in a large pan with olive oil for 4-6 minutes on each side until golden.
  3. Sauté the diced shallot and whole garlic cloves in the same pan until translucent.
  4. Create the flavor base by adding chicken stock, lemon juice, garlic powder, and red pepper flakes.
  5. Add Dijon mustard and heavy whipping cream, simmering until slightly thickened.
  6. Reintroduce the chicken to the pan and simmer for another 5 minutes.
  7. Finish by stirring in tarragon, parsley, and Parmesan cheese.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. Serve with rice or mashed potatoes.
