A vibrant and fresh salad celebrating Mediterranean flavors with juicy grilled shrimp, mixed greens, and feta cheese.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, lemon juice, oregano, salt, and pepper.
  3. Grill the shrimp for 2-3 minutes on each side until they turn pink and opaque.
  4. In a large bowl, combine mixed greens, cherry tomatoes, diced cucumber, red onion, feta cheese, and olives.
  5. Top the salad with the grilled shrimp.
  6. Drizzle with extra olive oil and lemon juice before serving.
