A cozy and nutritious cabbage soup perfect for chilly evenings, packed with wholesome vegetables.

Ingredients

  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil (for sautéing)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, sliced carrots, and chopped celery into the pot. Sauté until they begin to soften, about 5-7 minutes.
  3. Stir in the minced garlic and let it cook for another minute until fragrant.
  4. Toss in the chopped cabbage, diced tomatoes, vegetable broth, dried thyme, and season with salt and pepper.
  5. Raise the heat to bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes until all the vegetables are tender.
  6. Taste and adjust the seasoning if necessary, then ladle the soup into warm bowls.

Notes

For added flavor, consider a splash of apple cider vinegar or a squeeze of lemon before serving.
