A comforting and delicious Mediterranean-style soup made with chickpeas, fresh vegetables, and vibrant lemon flavors.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups vegetable broth
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are softened and fragrant, about 5-7 minutes.
  2. Stir in the rinsed chickpeas, vegetable broth, fresh lemon juice, lemon zest, and dried oregano. Season with salt and pepper to taste.
  3. Bring the soup to a boil, then reduce the heat to a gentle simmer. Let it simmer for 20-25 minutes.
  4. Serve hot, garnished with freshly chopped parsley.

Notes

Great served with crusty whole-grain bread or a Greek salad. Leftovers can be stored for up to 4 days in the fridge or can be frozen for up to 2 months.
