Creamy and cheesy White Rotisserie Chicken Enchiladas are a comforting dish perfect for family dinners or gatherings.

Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can green enchilada sauce
  • 8 flour tortillas
  • 1/2 cup diced green onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the shredded rotisserie chicken, cream cheese, sour cream, 1/2 cup of shredded cheese, garlic powder, green onions, salt, and pepper until well combined.
  3. Spread a thin layer of green enchilada sauce on the bottom of a baking dish.
  4. Spoon some of the chicken mixture into a tortilla, roll it up tightly, and place it seam-side down in the baking dish.
  5. Repeat with the remaining tortillas and chicken mixture.
  6. Pour the remaining green enchilada sauce over the top and sprinkle the rest of the shredded cheese on top.
  7. Cover the dish with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

These enchiladas can be served with a side of Mexican rice, refried beans, or a simple green salad.
