A luscious, guilt-free vegan strawberry cake perfect for any occasion, combining fresh strawberries with a light and fluffy texture.

  • 1 cup sugar
  • 1 cup almond milk (or any plant-based milk)
  • 1/2 cup vegetable oil
  • 1 cup fresh strawberries, pureed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, combine the almond milk, vegetable oil, pureed strawberries, apple cider vinegar, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top gently.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
