Ingredients

  • 2 cups snap peas, trimmed
  • 1 cup edamame, shelled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh mint
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine Fresh Ingredients: In a large bowl, combine the snap peas, edamame, cherry tomatoes, red onion, and mint.
  2. Whisk Together the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Toss and Combine: Pour the dressing over the salad and toss to combine.
  4. Serve or Chill: Serve immediately or refrigerate for an hour to let the flavors meld.

Notes
