A comforting and easy one-dish meal that captures the flavors of traditional cabbage rolls without the hassle of rolling them.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 head of cabbage, chopped
  • 1 can diced tomatoes
  • 1 cup rice (uncooked)
  • 2 cups beef broth
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a splash of olive oil in a large skillet over medium heat. Add the chopped onion and ground beef. Sauté until browned and crumbled, about 5-7 minutes.
  3. Add the chopped cabbage and cook until it begins to soften, about 3-4 minutes.
  4. Combine diced tomatoes (juice included), uncooked rice, beef broth, garlic powder, paprika, salt, and pepper. Mix thoroughly and bring to a simmer.
  5. Transfer the mixture to a greased baking dish and spread it evenly.
  6. Cover with foil and bake for 30-35 minutes.
  7. Remove from the oven and let sit for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. This dish can be frozen for up to 3 months.
