A comforting and hearty cornbread casserole with a savory blend of beans and meat, topped with melted cheese.

Ingredients

  • 1 box Jiffy Corn Muffin Mix
  • 1 can creamed corn
  • 1 can black beans, rinsed and drained
  • 1 cup cooked ground beef or turkey
  • 1 cup shredded cheese
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup milk
  • 1 egg

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 9×13 inch baking dish.
  2. Combine the Jiffy Mix, creamed corn, black beans, cooked meat, cheese, onion, bell pepper, chili powder, salt, pepper, milk, and egg in a large bowl until well combined.
  3. Pour the mixture into the prepared baking dish, spreading evenly.
  4. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  5. Cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen after baking.
