A delightful cornbread that’s moist and full of flavor, perfect for any meal.

Ingredients

  • 1 box Jiffy Corn Muffin Mix
  • 1/3 cup milk
  • 1 egg
  • 1/2 cup mayonnaise
  • 1/4 cup sugar (optional)
  • 1/4 cup corn kernels (optional)
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 400°F (200°C) and grease an 8-inch square baking dish.
  2. In a mixing bowl, combine Jiffy Corn Muffin Mix, milk, egg, and mayonnaise until smooth.
  3. If desired, add sugar and corn kernels, along with salt, and stir until just combined.
  4. Pour the batter into the greased baking dish and smooth the top with a spatula.
  5. Bake in the preheated oven for 20-25 minutes or until golden brown and a toothpick comes out clean.
  6. Allow to cool for a few minutes before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. Can be frozen for up to 3 months.
