Instructions

  1. Preheat your oven to 350°F (175°C). Combine chocolate cookie crumbs, melted butter, and sugar in a bowl until well-mixed. Press this mixture into the bottom of a springform pan to create an even crust. Bake for 10 minutes, then let it cool completely.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla extract, mixing well. Fold in the eggs, one at a time, ensuring each is well incorporated without overmixing. Pour this creamy filling over the cooled crust.
  3. Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and let it cool inside with the door slightly ajar for about an hour to help prevent cracking.
  4. Remove the cheesecake from the oven and allow it to cool to room temperature. Cover it with plastic wrap and refrigerate for at least 3 hours, ideally overnight, allowing the flavors to blend beautifully.
  5. In a clean bowl, whip the heavy cream until soft peaks form. In another bowl, combine the melted chocolate, powdered sugar, and vanilla extract. Gently fold the whipped cream into the chocolate mixture until thoroughly combined and light.
  6. Once the cheesecake is chilled, gently spread the chocolate mousse on top, smoothing it out to your desired look. Chill again for at least 30 minutes to set.
