A hearty and comforting Tuscan Soup rich with Italian sausage and fresh greens, perfect for chilly evenings.

Ingredients

  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 large potatoes, diced
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Brown the sausage in a large pot over medium heat until browned.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the diced potatoes and simmer until tender, about 15 minutes.
  5. Stir in the heavy cream and chopped kale, cooking until the kale is wilted.
  6. Season with salt, pepper, and red pepper flakes if desired.
