A flavorful Tuscan dish featuring creamy butter beans, vibrant spinach, and tangy sun-dried tomatoes, perfect as a side or a light main course.

Ingredients

  • 2 cans of butter beans
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Drain and rinse the butter beans under cold water.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Stir in sun-dried tomatoes and cook for another minute.
  5. Fold in the drained butter beans and heat through for about 3-4 minutes.
  6. Gently fold in the fresh spinach until it wilts.
  7. Season with salt and pepper to taste.
  8. Serve warm, topped with grated Parmesan cheese if desired.

Notes

If using dried beans, soak and cook according to package instructions. For a vegan option, omit the Parmesan.
