Ingredients

  • 4 oz dark chocolate, chopped
  • 4 oz milk chocolate, chopped
  • 4 oz white chocolate, chopped
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 2 teaspoons gelatin powder
  • Soft sponge or crisp base for serving

Instructions

  1. Melt the dark chocolate in a bowl set over simmering water. Let it cool slightly.
  2. Whip 1 cup of heavy cream with 1/4 cup of powdered sugar and 1/2 teaspoon of vanilla extract until soft peaks form.
  3. Fold in the melted dark chocolate into the whipped cream.
  4. Pour the dark chocolate mousse into dome molds and freeze until set.
  5. Create the milk chocolate mousse by repeating the melting and combining process.
  6. Pour the milk chocolate mousse into molds and freeze until it’s set.
  7. Prepare the white chocolate mousse by melting and folding it into whipped cream.
  8. Pour the white chocolate mousse into the molds atop the milk chocolate layer and freeze until fully set.
  9. Prepare your soft sponge or chocolate crisp base.
  10. Demold the mousses and place each on their respective bases.
  11. Decorate the domes as desired and serve them chilled.

Notes

For best results, ensure gelatin is fully dissolved. Feel free to experiment with flavors or base options.
