Ingredients

  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add chopped onion and minced garlic; sauté until softened.
  3. Stir in the diced tomatoes, vegetable broth, white beans, dried basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  5. Blend the soup partially or fully using an immersion blender for a creamier texture.
