Delicious and nostalgic toffee butter cookies that are perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup toffee bits
  • Chopped pecans or walnuts (optional)

Instructions

  1. Cream the butter and sugars until light and fluffy.
  2. Add the vanilla extract and mix until combined.
  3. Whisk the flour and baking soda together in another bowl.
  4. Gradually mix the dry ingredients into the butter mixture.
  5. Fold in the toffee bits and nuts if using.
  6. Divide the dough into logs and chill in the refrigerator for at least 4 hours.
  7. Preheat the oven to 350°F (175°C).
  8. Slice the chilled dough into ¼ inch thick cookies.
  9. Place cookies on parchment-lined baking sheets and bake for 10-12 minutes.
  10. Cool slightly before transferring to wire racks.

Notes

For a fun twist, try adding chocolate chips or dried fruit.
