  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed espresso, cooled
  • 1/2 cup powdered sugar for dusting
  • 1/2 cup mascarpone cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, cocoa powder, baking powder, and salt.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and cooled espresso.
  5. Combine the dry ingredients with the wet until just combined.
  6. Fold in the mascarpone cheese gently.
  7. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until edges are set and centers are soft.
  9. Cool slightly before dusting with powdered sugar.

Notes

For a more intense coffee flavor, you can increase the espresso. Store leftovers in an airtight container for up to 5 days.
