  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar (for dusting)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1/4 cup strong brewed espresso, cooled
  • 1/2 cup cocoa powder
  • 1/2 cup mascarpone cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add in the egg, vanilla extract, and cooled espresso, mixing until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the cocoa powder and mascarpone cheese until well mixed.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are set.
  9. Allow the cookies to cool slightly before dusting with powdered sugar and serving.
