A vibrant and flavorful Jamaican cabbage dish that combines sweet and savory tastes, perfect as a side or a main vegetarian delight.

Ingredients

  • 1 small head of cabbage, chopped
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • Salt and pepper to taste
  • 1 carrot, grated
  • 2 scallions, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers invitingly.
  2. Add the sliced onion and bell pepper. Sauté until they grow soft and aromatic, about 3-4 minutes.
  3. Stir in the minced garlic, thyme, allspice, salt, and pepper. Cook for about 1-2 minutes until the spices bloom.
  4. Add the chopped cabbage and grated carrot to the skillet. Mix them in until the colors swirl together.
  5. Cover the skillet and let it cook for 10-15 minutes, stirring occasionally until the cabbage is tender.
  6. Remove from heat and stir in the chopped scallions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water.
