Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning
  • ¾ cup water
  • 1 cup vegetable oil
  • 8 flour tortillas (taco size)
  • 15 ounce can refried beans
  • 10 ounce can enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • Diced tomatoes (for topping)
  • Sliced green onion (for topping)
  • Sliced olives (for topping)
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 400°F.
  2. In a skillet, brown and crumble the ground beef over medium heat for about 5-7 minutes. Drain excess grease.
  3. Add taco seasoning and water to the beef, stir, and simmer until thickened (about 5 minutes).
  4. Heat vegetable oil in a separate skillet, fry each tortilla until crispy and golden brown, about 3-4 minutes each.
  5. Warm the refried beans in a microwave-safe bowl for easier spreading.
  6. On each crispy tortilla, spread refried beans, top with seasoned beef, add another tortilla, cover with enchilada sauce, and sprinkle cheese.
  7. Arrange the pizzas on a baking sheet and bake for 8-10 minutes until cheese is melted.
  8. Garnish with diced tomatoes, green onions, olives, and sour cream before serving.

Notes

Adjust the spice level by choosing mild or hot taco seasoning. You can also swap the beef for ground turkey or a plant-based alternative.
