Sweet Potato Rounds with Goat Cheese and Cranberry Balsamic Glaze

A delightful appetizer featuring roasted sweet potatoes topped with creamy goat cheese and finished with cranberry sauce and balsamic glaze.

Ingredients

  • 2 large sweet potatoes, sliced into 1.5 cm rounds
  • 1 tbsp olive oil
  • Salt & pepper
  • 1/2 cup cranberry sauce (whole berry preferred)
  • 100g soft goat cheese, crumbled
  • 2 tbsp balsamic glaze
  • Fresh thyme sprigs for garnish
  • Cracked black pepper (optional)

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Line a tray with parchment paper.
  3. Place the sweet potato slices in a single layer on the lined tray.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
  6. Remove from the oven and cool slightly.
  7. Dollop cranberry sauce on each round.
  8. Sprinkle crumbled goat cheese over each round.
  9. Drizzle with balsamic glaze.
  10. Garnish with fresh thyme sprigs and serve warm or at room temperature.

Notes

These sweet potato rounds pair well with a crisp salad or roasted chicken. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
