  • 1/2 cup sugar substitute (like erythritol or stevia)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil or butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: sugar-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the almond flour, sugar substitute, cocoa powder, baking powder, and salt in a mixing bowl.
  3. Whisk together the melted coconut oil, eggs, and vanilla extract in another bowl.
  4. Mix the wet ingredients into the dry ingredients until thoroughly combined. Optionally, fold in chocolate chips.
  5. Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes until set and slightly firm.
  7. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
