Delicious and easy sugar-free chocolate cookies made with almond flour, perfect for low-carb and ketogenic diets.

  • 1 cup almond flour (or coconut flour)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup sugar substitute (like erythritol or stevia)
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of salt
  • Sugar-free chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, sugar substitute, baking soda, and salt.
  3. In a separate bowl, whisk together melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined. Fold in sugar-free chocolate chips if using.
  5. Scoop out tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper.
  6. Flatten the cookies slightly with the back of a spoon.
  7. Bake for 10-12 minutes, or until the edges are firm.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. For a chewier cookie, do not over-bake.
