  • 1 cup rice (uncooked)

  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Shredded cheese (for topping)
  • Fresh parsley (for garnish)

Instructions

  1. Browning the beef: In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Sautéing vegetables: Add the chopped onion, bell pepper, and garlic to the pot. Sauté until the vegetables are tender.
  3. Combining ingredients: Stir in the diced tomatoes, beef broth, rice, Worcestershire sauce, Italian seasoning, salt, and pepper.
  4. Simmering the soup: Bring the mixture to a boil, then reduce heat, cover, and simmer for about 20-25 minutes, or until the rice is tender.
  5. Serving up the comfort: Serve hot, topped with shredded cheese and fresh parsley if desired.

Notes

For a vegetarian version, swap the ground beef for lentils or quinoa, and use vegetable broth instead.
