A delightful twist on classic tiramisu, featuring luscious layers of strawberries and creamy mascarpone.

Ingredients

  • 4 cups quartered strawberries (600 grams)
  • 1 cup granulated sugar (200 grams)
  • 4 tbsp lemon juice
  • 1/3 cup strawberry jam
  • 1 cup strawberry liqueur
  • 2 cups mascarpone cheese (452 grams)
  • 1/2 cup powdered sugar (62.5 grams)
  • 3 tbsp lemon juice (45 ml)
  • 1 tsp pure vanilla extract
  • 1 3/4 cup heavy whipping cream (420 ml)
  • 3/4 cup chopped strawberries (112 grams)
  • 28 ladyfinger cookies
  • 1/2 cup whipping cream (very cold)
  • 1 cup freeze-dried strawberries (28 grams)

Instructions

  1. Prepare the Strawberry Jam by combining strawberries, granulated sugar, and lemon juice in a saucepan. Simmer for 10-12 minutes until thickened, then cool and mix in strawberry jam.
  2. Create the Mascarpone Filling by mixing mascarpone cheese, powdered sugar, lemon juice, and vanilla extract. Beat until smooth and creamy.
  3. Whip the Heavy Cream until soft peaks form, then fold one-third into the mascarpone mixture. Gradually fold in the remaining whipped cream.
  4. Assemble the Layers by dipping ladyfinger cookies in strawberry liqueur, layering half of them in a dish, followed by half of the mascarpone filling and chopped strawberries.
  5. Repeat the layers with remaining ladyfingers and mascarpone filling, smoothing the top for presentation.
  6. Prepare the Topping by whipping cold whipping cream until soft peaks form, then gently spread over the final mascarpone layer and sprinkle with freeze-dried strawberries.
  7. Chill and Serve by covering with plastic wrap and refrigerating for at least 3 hours, then let sit at room temperature for 15 minutes before slicing.

Notes

For a non-alcoholic version, substitute the strawberry liqueur with a mix of water and cranberry juice.
