A delightful Strawberry Shortcake Cake layered with fluffy whipped cream and fresh strawberries, perfect for celebrations or casual gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 cups fresh strawberries, sliced
  • 2 cups whipped cream
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan.
  2. In a bowl, sift together the flour, baking powder, and salt.
  3. Cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, followed by stirring in the vanilla.
  4. Alternately add the flour mixture and milk to the butter mixture, starting and ending with the flour, and mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. Once cool, carefully slice the cake in half horizontally.
  7. On the bottom layer, spread half of the whipped cream followed by half of the sliced strawberries.
  8. Carefully place the top layer back on and spread the remaining whipped cream on top, decorating with the rest of the strawberries and dusting with powdered sugar before serving.

Notes

Serve with vanilla ice cream or chocolate sauce for an extra treat. Best enjoyed fresh!
