Strawberry Pretzel Salad

A delightful blend of crunchy pretzel crust, creamy cheesecake layer, and sweet strawberry topping, perfect for potlucks and summer gatherings.

Ingredients

  • 2 1/2 cups pretzels (crushed)
  • 3/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 8 ounces cream cheese (softened)
  • 3/4 cup granulated sugar
  • 8 ounces frozen whipped topping (thawed)
  • 1 teaspoon vanilla extract
  • 16 ounces strawberries (sliced)
  • 6 ounces strawberry Jell-O mix
  • 2 cups water

Instructions

  1. Preheat the oven to 375°F. Spray a 13×9 baking dish with nonstick spray and set aside.
  2. Crush the pretzels using a food processor until you have crushed pieces. Transfer to a medium bowl.
  3. In the bowl with the crushed pretzels, add the melted butter and sugar. Stir everything together until well combined.
  4. Press the crust mixture firmly into the bottom of the baking dish. Bake for 10 minutes, then remove from the oven and let it cool completely.
  5. While the crust is cooling, in a stand mixer, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy, then fold in the thawed whipped topping.
  6. Once the pretzel crust is completely cool, spread the cream cheese mixture over it, reaching all the edges for a complete layer. Place in the fridge to chill for at least 30 minutes.
  7. While the cream cheese layer chills, in a medium saucepan over medium to high heat, bring 2 cups of water to a boil. Remove from heat and pour over the strawberry gelatin in a medium bowl. Whisk until dissolved, then let it cool to room temperature.
  8. After the cream cheese layer has chilled, remove from fridge. Layer the sliced strawberries evenly over the cream cheese filling. Pour the cooled Jell-O over the strawberries.
  9. Place the entire dish back in the fridge and chill for about 3-4 hours, until the Jell-O is fully set. Once firm, slice and serve with whipped topping or extra strawberries.

Notes

Make sure your cream cheese is softened to room temperature to avoid lumps. Experiment with different fruits or Jell-O flavors for a twist. Leftovers can be stored in the refrigerator for up to 3 days.
