Delightful cupcakes bursting with the flavors of fresh strawberries and zesty lemon, perfect for celebrating love.

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup fresh strawberries, chopped
  • Buttercream frosting
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and mix until crumbly.
  4. In a separate bowl, whisk together the eggs, milk, vanilla extract, lemon zest, and lemon juice.
  5. Gradually pour the wet ingredients into the dry ingredients and mix until combined.
  6. Gently fold in the chopped strawberries.
  7. Fill the cupcake liners about 2/3 full with batter.
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  9. Allow the cupcakes to cool completely before frosting them with buttercream frosting and topping with fresh strawberries.

Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
