Strawberry Cinnamon Rolls with Brioche

Soft, fluffy cinnamon rolls bursting with sweet strawberries and warm cinnamon, perfect for brunch or a special treat.

  • 2 cups all-purpose flour
  • 1 cup brioche dough (prepared or store-bought)
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup melted butter
  • 1/4 cup powdered sugar
  • 12 tablespoons milk
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare for baking those lovely rolls.
  2. On a floured surface, roll out the brioche dough into a rectangle, about ¼ inch thick.
  3. Generously spread the melted butter over the surface of the rolled-out dough.
  4. In a small bowl, mix together the sugar and ground cinnamon.
  5. Sprinkle the cinnamon-sugar mixture evenly over the melted butter.
  6. Spread the chopped strawberries over the sugar mixture.
  7. Starting from one long side, carefully roll the dough tightly into a log.
  8. Using a sharp knife, cut the log into 1-inch rolls and place in a greased baking dish.
  9. Beat the egg and brush it over the tops of the rolls.
  10. Bake in the preheated oven for 20-25 minutes, until golden brown.
  11. In a separate bowl, mix the powdered sugar with milk to make a glaze and drizzle it over the warm rolls just before serving.

Notes

For extra fluffy rolls, let the cut rolls rise for about 20 minutes before baking. Experiment by adding nuts or chocolate chips for added flavor.
