A delightful twist on strawberry cheesecake in cookie form, topped with homemade jam.

  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, diced
  • 1 cup prepared strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, cream cheese, and granulated sugar until smooth.
  3. Add in the powdered sugar and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the cream cheese mixture until just combined.
  5. Gently fold in the diced strawberries.
  6. Drop spoonfuls of the cookie dough onto a prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. After cooling, add a dollop of homemade strawberry jam on top of each cookie.
