A delightful and moist Strawberry Banana Bread that captures the essence of summer with fresh strawberries and ripe bananas.

  • 2 ripe bananas, mashed
  • 1 cup strawberries, chopped
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas until fully combined.
  3. Mix in the sugar, beaten egg, and vanilla extract, stirring until well blended.
  4. Sprinkle the baking soda and a pinch of salt over the mixture and mix in.
  5. Add the flour and mix until just combined.
  6. Gently fold in the chopped strawberries.
  7. Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve with whipped cream or cream cheese frosting. Store leftovers in an airtight container for up to three days.
