Delicious and nutritious egg bites filled with spinach and feta, perfect for meal prep or a quick breakfast.

Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
  2. Blend the cottage cheese and eggs in a blender until smooth and creamy.
  3. Add chopped spinach, crumbled feta, salt, and pepper to a mixing bowl and mix well.
  4. Pour the blended egg mixture into the bowl and stir until well combined.
  5. Distribute the mixture evenly into the muffin tin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until set and slightly puffed.
  7. Allow to cool for a few minutes before removing from the muffin tin.
  8. Serve warm or cool completely before storing in the fridge.

Notes

Grease the muffin tin well to avoid sticking. Feel free to experiment with additional ingredients like bell peppers or herbs for more flavor.
