A vibrant and fresh salad that captures the spirit of the Southwest, perfect for summer gatherings.

Ingredients

  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 can black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 avocado, diced
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, black beans, corn, avocado, red onion, bell pepper, and cilantro. Mix gently.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  3. Drizzle the dressing over the salad mix and toss gently to combine.
