These bagels combine the sharpness of cheddar with spicy jalapeños for a delightful breakfast treat.

Ingredients

  • 1 ½ teaspoons active dry yeast
  • 1 ½ teaspoons salt
  • 1 ¾ cups warm water (105-115°F or 40-46°C)
  • 2 tablespoons barley malt syrup or honey
  • 23 jalapeños, seeded and finely diced
  • 8 cups water (for boiling)
  • 2 tablespoons baking soda
  • Optional: everything bagel seasoning for garnishing

Instructions

  1. Combine Ingredients: In a large bowl, combine the bread flour, yeast, and salt. Add warm water and barley malt syrup or honey, and mix until a shaggy dough forms.
  2. Knead the Dough: Knead the dough for 8-10 minutes until smooth and elastic.
  3. Let It Rise: Place the dough in an oiled bowl, cover, and let rise for 60-90 minutes until doubled in size.
  4. Punch It Down: Punch down the dough to release air and flatten it on a floured surface.
  5. Add the Goodness: Knead in the cheddar cheese and jalapeños until well distributed.
  6. Shape the Bagels: Divide the dough into 8 pieces, roll each into a rope, and form into bagels.
  7. Second Rise: Let the bagels rise on a lined baking sheet for 20-30 minutes.
  8. Preheat & Boil: Preheat the oven to 450°F (232°C) and bring 8 cups of water to a boil, adding baking soda.
  9. Boil the Bagels: Boil bagels 1 minute per side, 2-3 at a time.
  10. Bake to Perfection: Place bagels on a baking sheet, sprinkle with seasoning if desired, and bake for 20-25 minutes until golden brown.
  11. Cool Down: Let cool on a wire rack before slicing.
