A flavorful celebration of breakfast featuring creamy chipotle mayo, fluffy eggs, and crispy English muffins.

  • 1/4 cup mayonnaise
  • 1 tablespoon canned chipotle peppers in adobo sauce (minced)
  • 1 teaspoon fresh lime juice
  • 4 English muffins, split and toasted
  • 4 large eggs
  • 4 slices sharp cheddar cheese
  • 4 slices cooked bacon or sausage patties (optional)
  • 1 tablespoon butter or oil
  • Salt and pepper to taste
  • Avocado slices or baby spinach (optional, for serving)

Instructions

  1. In a small bowl, mix together the mayonnaise, minced chipotle peppers, and lime juice until smooth.
  2. Heat the butter or oil in a nonstick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness, seasoning with salt and pepper.
  3. Split and toast the English muffins until golden brown and slightly crispy.
  4. Spread chipotle mayo on the cut sides of the toasted English muffins. Layer each muffin half with a slice of cheddar cheese followed by the cooked egg. If using, add bacon or sausage, and top with avocado slices or baby spinach.
  5. Press the sandwiches together and serve warm.

Notes

Leftover sandwiches can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet on low heat or a toaster oven.
