Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 carrot, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, garlic, bell pepper, and carrot; sauté until softened.
  3. Stir in the diced potatoes and cook for a couple of minutes.
  4. Pour in the vegetable broth and diced tomatoes; add Cajun seasoning, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 20-25 minutes until potatoes are tender.
  6. Use an immersion blender to puree some of the soup for a creamier texture, if desired.
  7. Serve hot, garnished with chopped green onions.

Notes

Make sure to cut the potatoes into even-sized pieces for consistent cooking. Adjust the consistency by adding more or less vegetable broth based on your preference.
